ViSalus | Improvising Recipes
Okay, so I’ll admit- this post has nothing to do with ViSalus. I just want to share.
As I mentioned in my previous post, Planning for a Healthy Week, I did my grocery shopping about a week ago. I had last week’s meals planned out with my shopping list, and this week I’m planning with what I have left over.
I used a tablespoon to scoop out about 3 heaping spoonfuls of Coconut Oil and heated in a skillet at Medium. ( You can also use butter)
I added 1/2 cup of flour and mixed with a whisk.
Then, I added spice mixture:
2 tsp chili powder
1 tsp cumin
1 tsp of salt-free Garlic&Herb Perfect Pinch by McCormick
little bit of black pepper
I knew I needed some tomato flavor so I took some tomatoes I had diced and frozen last week and pureed them. Then, I also had a tiny bit of store-bought canned marinara sauce. I added both.
I’ve been trying to get away from using canned soups but I didn’t have any broth and I found a can of cream of mushroom, so I added that and a little bit of water.
Then, I had about a pound (maybe less) of ground turkey leftover from other recipes last week (Lasagna), because I bought about 4 pounds. So, I browned it in a pan and then added my sauce.
I also had a half a bag of spinach in the freezer. I bought a large bag, took out some for salad and froze the rest whole. I’ve found that the frozen spinach is really easy to cut up for recipes, such as soups, and casseroles. I grabbed a couple handfuls and cut it up. I had some sliced frozen jalapenos, so I took a few slices and cut them in tiny pieces. I also had some left-over cilantro. I mixed the spinach, jalapenos, and cilantro and added them to my meat sauce.
I coated a large glass pan with some coconut oil. I had corn-tortillas in the freezer from tacos the week prior. I lined the pan with six and then coated with my meat sauce. I didn’t have much cheese left over, so I did a layer of mozzarella shredded cheese (from Lasagna recipe), then another layer of tortillas, meat sauce, then some pre-sliced cheddar cheese.
Put in the over for about 40 min. at 350.

So, there you have it! You don’t have to have a recipe or everything you “need” to make a great meal! Just try something new!
